Beans, Chipilin and Pork with Chirmol Salsa
Chilpilin is a Mayan vegetable
Serves: 5
Ingredients
3/4 lb pork meat
1 garlic clove
1 bunch chipilin
1 onion
1 jalapeƱo chile
3/4 lb tomatoes
3/4 lb cooked black beans
Salt
Oil
Directions
Place the pork, garlic and salt in water enough to cover and cook until done and no longer pink inside.
Once the meat is cooked, chop onion, jalapeƱos and tomatoes and fry them with Chipilin leaves.
Add cooked beans (add salt if necessary). Once Chipilin leaves are cooked, serve with meat.
