Chicken-Tortilla Soup


Chicken-Tortilla Soup
4 servings
Ingredients
1/2 cup onion, sliced
1 cup plum tomato, diced
baked tortilla strips
1/2 cup green bell pepper, or pasilla chilis sliced
6 ounces chicken breasts
4 cups chicken broth
2 tablespoons cilantro, chopped fresh
1/4 teaspoon cumin
2 tablespoons oregano, chopped fresh
2 cloves garlic
1/2 cup red bell pepper, sliced
Ingredients

In a medium saucepan bring broth to a boil. Add chicken strips, cook 5 minutes, skimming fat. Add onion, bell peppers, chilies, tomatoes, garlic and cumin. Cook 10 minutes longer. Stir in oregano and cilantro. Serve with tortilla strips as garnish.
