Sweet Corn & Bean Salad

Sweet Corn & Bean Salad
Makes 4 servings
Ingredients
1 1/2 cups beans,kidney
1 cup corn, sweet
1 cup tomatoes
1/4 cup pepper,sweet green
2 tablespoons parsley
2 tablespoons basil
1/4 teaspoon salt
1/8 teaspoon pepper
1 oz lime juice
Directions
Steam ears of corn. When cool, cut kernels from the cobs to yield 1 cup.
Peel seed and chop the tomatoes.Finely mince the green pepper, parsley and basil.Combine with the salt, pepper and lime juice and mix well.Chill before serving
Optional: Add the zest of the lime and a dash of your favorite hot sauce
